Wee Heavy Scottish Witbeir

Wonderful fusion of two favorite recipes, a great old Wee Heavy Scottish Ale recipe and a wonderful Witbeir culminating in a Big, Bold Fantastically Fanciful Wee Heavy Scottish Ale with a light and refreshing quality. Just be careful, because this Witbeir is one that can really leave you "Lost in the Highlands! ENJOY!!!

Type: Extract w/grain Size: 5 gallons
Color:
22 HCU (~12 SRM)
Bitterness: 25 IBU
OG: 1.081 FG: 1.010
Alcohol: 9.2% v/v (7.2% w/w)
Water: Good, clean & pure water with a pH of 6.4
Grain: 1 lb. Flaked oats
1 lb. Flaked wheat
Steep: �Steep the flaked oats & wheat for 20 minutes in 1.5 gallons of H2O at 152.0 F, then sparge with 0.5 gallons at 160.0 F. �Add 4.0 gallons of water and bring to boil then flameout, add wheat and amber malt extracts and stir until dissolved well, then bring to boil.
Boil: 60 minutes SG 1.074 5.5 gallons
7 lb. Amber malt extract
3 lb. 4 oz. Wheat extract
Add 1.0 oz. Willamette hops and boil for 60 mins. At 15 minutes add 1.0 oz. Cascade hops, 1.0 oz. Corriander, and 1.0 oz. Sweet Orange peel and 1 teaspoon Irish moss.
Hops: 1.0 oz. Willamette (5% AA, 60 min.)
1.0 oz. Cascade (7.8% AA, 15 min.)
1.0 oz. corriander (15 min.)
1.0 oz. sweet orange peel (15 min.)
0.5 oz. Cascade (aroma)
Yeast: Use Wyeast Activator - Scottish Ale #1728XL
