Hookjaw Pale Ale

Brewed for the 2010 PA trout season opener.

Type: All grain Size: 5.5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 68 IBU
OG: 1.056 FG: 1.010
Alcohol: 5.9% v/v (4.6% w/w)
Water: TC tap water with 1 TBS 5.2 mash stabilizer and 1 tsp gypsum.
Grain: 10 lb. US 2-row
2 oz. Honey Malt
4 oz. Crystal 80L
Mash: 80% efficiency
Add 13 quarts of 168°F water to grains. Allow 1 hour at 153°F. Pull 1 gallon decoction, add to 1 gallon boiling water, bring to boil and reintroduce to mash tun. Hold 10 min at 170°F. Continuous sparge with 170°F water to reach 7.5 gal.
Boil: 60 minutes SG 1.041 7.5 gallons
1 tsp Irish Moss last 15 minutes.
Hops: 1 oz. Citra (11.1% AA, 60 min.)
.5 oz. Citra (11.1% AA, 30 min.)
.5 oz. Citra (11.1% AA, 15 min.)
1 oz. Citra (aroma)
Yeast: White Labs 007 in a 1 qt starter.
Log: Primary at 65°F for 7-10 days. Add 1 oz Citra hops at secondary (listed as "Aroma" on ingredients page), allow 2 weeks in secondary.
Carbonation: Keg and force carbonate.
