Alcohol: 5.3% v/v (4.2% w/w)
Water: Cincinnati tap through charcoal filter
Grain: 14 lb. British pale
6 lb. British Maris Otter
4 oz. British crystal 70-80L
1 oz. Roasted barley
5 oz. Belgian Special B
9 oz. British crystal 50-60L
Mash: 68% efficiency
Strike with 8G @ 166° Mash for 80 minutes at starting at 152°-->149° no-mash-out I have a cooler, working on the third keg so you can mash out at 168 if you want to....Sparge with ~10G of 170° aqua until at 12G or runoff gravity below 1.006
Boil: 60 minutes SG 1.047 12 gallons
8 oz. Brown sugar
4 oz. Honey
Hops: .5 oz. Cascade (8% AA, 60 min.)
1.4 oz. Cascade (8% AA, 20 min.)
.7 oz. Cascade (8% AA, 10 min.)
.4 oz. Cascade (8% AA, 2 min.)
Yeast: 2L starter wlp004 on 3 cups LME
Log: Ferment 11 days at 66° Rack and cellar at 60° for 14 days

Carbonation: 2.5 volumes Dried Malt Extract: 14.7 oz. for 10.5 gallons @ 60°F
Prime each 5g batch with 5/4 cup DME. Allow 3 weeks for conditioning (if you can resist)
