Bitterness: 16 IBU
OG: 1.096 FG: 1.018
Alcohol: 10.0% v/v (7.9% w/w)
Water: Tap water for boil, bottled poland springs to ferment
Grain: .5 lb. Belgian aromatic
.25 lb. Belgian CaraVienne
.5 lb. Belgian Special B
.5 lb. American chocolate
Steep: All grains in at 150 deg. and 30 min at 160 deg. Sparge and rinse grains w 1.5 liters at 180 deg for 1 min, added back to brew pot.
Boil: 70 minutes SG 1.150 3.5 gallons
6 lb. Light dry malt extract
3 lb. Amber dry malt extract
1 lb. Wheat extract
.35 lb. Brown sugar
1 lb. Belgian candi sugar
.25 oz. Molasses
Reserved .15 lbs amber candy sugar and added after 2 days of fermentation.
Also added: 1 tsp. vanilla extract 10 min
2 tsp cinnamon 10 min
1 tsp gypsum 10 min
Hops: 1 oz. Styrian Goldings (5.5% AA, 60 min.)
.5 oz. Styrian Goldings (5.5% AA, 45 min.)
.5 oz. Styrian Goldings (5.5% AA, 30 min.)
.5 oz. Hallertauer (4.25% AA, 15 min.)
.5 oz. Hallertauer (aroma)
Yeast: Wyeast 3787 trappist high gravity - made starter pack with 8 cups water & 2 cups lite DME 24 hours prior
Log: Pitched at 70 deg. with generous aerating. OG @ 1.096
Tasting: Tasted after 6 days in primary and it is very good so far. Gravity at 1.03
