Alcohol: 5.2% v/v (4.1% w/w)
Water: Publix filtered
Grain: 4 lb. Malteurop
2 lb. Briess American 6-row
2 lb. Briess Crystal 20
6 lb. Flaked rice
Mash: 94% efficiency
Decoction at 150F for 60 minutes with sparges at 170-175 degrees. Two five gallon sparges.
Boil: 75 minutes SG 1.037 13.5 gallons
Supermoss at 15 minutes to the boil.
Hops: 3 oz. Centennial (8% AA, 75 min.)
2 oz. Cascade (5.4% AA, 30 min.)
1 oz. Cascade (5.4% AA, 5 min.)
2 oz. Spalt (2.7% AA, 5 min.)
Yeast: Rehydrated Safale US-05.
Log: Brewed on 12/22/9. A honey bee flew into my wort. I found it just before racking. Keeping fingers crossed that he flew in during the boil. Racked to secondaries on 12/30/9. No infections so far. On 12/31/9, I added an ounce of pelletized cascades to each secondary container. Still no infections.
