Alcohol: 6.9% v/v (5.4% w/w)
Water: Tap water with 1 TBS 5.2 Mash Stabilizer and 1 tsp gypsum in mash tun.
Grain: 11 lb. American 2-row
4 oz. American crystal 80L
4 oz. Belgian Special B
8 oz. American chocolate
6 oz. American black patent
4 oz. Breiss Special Roast
Mash: 80% efficiency
153F for 60 min with 1.2 qt per pound. Mash out for 10 min at 170F. Sparge with 170F water to attain 7 gal.
Boil: 60 minutes SG 1.052 7 gallons
1 tsp rehydrated Irish Moss last 15 minutes.
Hops: 1 oz. Chinook (11.4% AA, 60 min.)
.5 oz. Simcoe (11.9% AA, 30 min.)
.5 oz. Cascade (7.5% AA, 15 min.)
.5 oz. Citra (11.1% AA, 15 min.)
.25 oz. Nugget (13.7% AA, 15 min.)
.5 oz. Cascade (aroma)
.5 oz. Citra (aroma)
.25 oz. Nugget (aroma)
.5 oz. Simcoe (aroma)
Yeast: White Labs 007 in a 1 qt starter.
Log: Primary 5-10 days at 65F. Rack to secondary and add .5 oz each of Citra, Cascade and Simcoe hops, and .25 oz of Nugget hops. Allow 1 week in secondary. Filter into keg.
Carbonation: Force carbonate.
