I'm Hooked ESB

red hook esb clone, i know i am using the wrong hops, but they were on hand so we will see how it goes

Type: Extract w/grain Size: 5 gallons
Color:
32 HCU (~16 SRM)
Bitterness: 39 IBU
OG: 1.061 FG: 1.015
Alcohol: 5.9% v/v (4.6% w/w)
Water: portland, or bullrun tap water works great
Grain: 8 oz. Dextrine malt (Cara-Pils)
1 lb. 8 oz. British crystal 70-80L
Steep: steep specialty grain 30 min 155 degrees in 1.5 gallons, sparge with 1.5 gallons 155 degree water
Boil: 60 minutes SG 1.053 5.75 gallons
6 lb. 4 oz. Light malt extract
1 lb. Light dry malt extract
1 tsp irish moss at 30 min
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Cascade (6% AA, 15 min.)
Yeast: wlp 013 london ale harvested from primary of total assumption ipa
Carbonation: 1.5 volumes Keg: 0.7 psi @ 38°F
will carbonate naturally in the keg with 1/4 cup corn sugar for at least 2 weeks prior to tapping
