THOR's Hop Hammer

Mash and dry hops are the trick here. I use Amarillo leaves and pellets for everything else. I cook loose. In addition, just to mix it up, I'll throw in less than an ounce of whatever hop I have on hand, simcoe, warrior into the dry hop.

Bitterness: 1 IBU
OG: 1.079 FG: 1.020
Alcohol: 7.6% v/v (6.0% w/w)
Grain: 2 lb. American 2-row
4 oz. Belgian biscuit
6 oz. American crystal 40L
13 oz. Dextrine malt (Cara-Pils)
Mash: 65% efficiency
Mash hops in grain bag. Stir it up. Make that Funky oatmeal homebrewer.
Boil: 60 minutes SG 1.072 5.5 gallons
7 lb. Light dry malt extract
Hops: 1 oz. Centennial (10.5% AA, !!!Mash min.)
1 oz. Amarillo (!!!Mash min.)
5 oz. Amarillo Dry Hop 6 Days 5oz (!!!Mash min.)
1.5 oz. Columbus (60 min.)
5 oz. Columbus (30 min.)
1 oz. Centennial (10.5% AA, 1 min.)
1 oz. Columbus (1 min.)
Yeast: White Labs Cali Pale
Log: I add my dry hops to the primary after peak fermentation is done. Maybe a bubble every 45 secs or every minute. Dry hop for about a week, so that when the fermentation is done, the dry hop is done.
Carbonation: bottle. 4-5 oz corn sugar
