Dessert Stout

Jamil's McQuaker Stout with a Chocolate twist!

Type: All grain Size: 2 gallons
Color:
105 HCU (~36 SRM)
Bitterness: 44 IBU
OG: 1.065 FG: 1.018
Alcohol: 6.1% v/v (4.8% w/w)
Grain: 56 oz. British pale
4 oz. American victory
4 oz. Crystal 80L
4 oz. American chocolate
2.5 oz. Roasted barley
8 oz. Flaked oats
Mash: 78% efficiency
Ground very find, and I had stuck mash, since I did not use rice hulls! Next time...
Boil: 60 minutes SG 1.045 2.875 gallons
Add 2.8oz Hershey chocolate powder at 5 min
Hops: .25 oz. Magnum (14.2% AA, 60 min.)
.25 oz. Kent Goldings (5% AA, 20 min.)
.25 oz. Kent Goldings (5% AA, 10 min.)
Yeast: I used Nottingham, but will try with S04 as well.
Log: Mashed at 154F, would drop to 152 with S04 yeast.
I bumped C80 from 3% up to 5% to help cover chocolate bitterness.
Maybe even more oats in this chocolate version (12%-15%)
Carbonation: 2.5 volumes Corn Sugar: 1.71 oz. for 2 gallons @ 65°F
Very little head, even at 2.5 vol, but flavor seams fine, just not as pretty of a pour.
Tasting: Wow, first sample was great. Nice chocolate aroma, smooth and well balanced.
