Baby Benjamin Barley Wine

Brewed to celebrate the birth of our first child -- optimistically assumed to be a boy.

34 HCU (~17 SRM)
Bitterness: 93 IBU
OG: 1.129 FG: 1.032
Alcohol: 12.5% v/v (9.8% w/w)
Water: Reverse osmosis treated municipal water with 1 tablespoon of calcium carbonate and a pinch of table salt.
Grain: 20 lb. British pale
1 lb. Wheat malt
1.5 lb. Belgian aromatic
.75 lb. American crystal 80L
1 oz. American chocolate
Mash: 65% efficiency
Single infusion mash (1.25 qts/lb) @ 149°F.
Sparge with 175°F water.
Boil: 120 minutes SG 1.089 8 gallons
3 lb. Light malt extract
.75 lb. Molasses
Wirfloc tablet added for the last 20 minutes of the boil. 1 tsp yeast nutrient added for last five minutes.
Hops: 2 oz. Chinook (11.5% AA, 90 min.)
2 oz. Cascade (6% AA, 25 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Cascade (6% AA, 10 min.)
1 oz. Amarillo (aroma)
1 oz. Northern Brewer (aroma)
Yeast: WLP007 -- repitched atop yeast cake from a honey porter (OG of porter: 1.068).
Log: Brewed on 11/7/09. The malt extract and blackstrap molasses are not added to the boil; they are boiled, cooled, and added to the fermenting beer in three installments during the first three days of primary fermentation. Oxygen is added to the beer (via hepa filter, stainless steel diffusion stone, and aquarium pump) for 10 minutes following the three daily sugar additions.
Carbonation: Primed bottles with 3/4 cup table sugar boiled in minimal water for five minutes.
