Didn't get around to brewing for October...

Type: Partial mash Size: 5 gallons
Color:
28 HCU (~15 SRM)
Bitterness: 33 IBU
OG: 1.055 FG: 1.015
Alcohol: 5.2% v/v (4.0% w/w)
Grain: 1.5 lb. American 2-row
2 lb. German Munich
1 lb. Dextrine malt (Cara-Pils)
3 oz. Belgian chocolate
.5 lb. American 2-row (home toasted)
Mash: 68% efficiency
5 quarts (1.25 gallons) at 130F. Stabilize at 122F for 30 minutes.

Add 2.5 quarts boiling water, stabilize at 165F.

Sparge with 2-2.5 gallons of 170F water. Try and keep grain bed at 150F. (Too hot = astringent)

Collect 3 gallons of wort - add water if necessary (Too much run-off collected = astringent)
Boil: 75 minutes SG 1.092 3 gallons
4 lb. Light malt extract
Add .25tsp Irish Moss for last 15 minutes.

Steep aroma hops for 2-3 minutes
Hops: 1 oz. Cascade (7.2% AA, 75 min.)
1 oz. Mt. Hood (5.2% AA, 30 min.)
1 oz. Mt. Hood (5.2% AA, 15 min.)
1 oz. Mt. Hood (aroma)
Yeast: White Labs German Lager Yeast - started day before
Log: Primary - 50-60F
Secondary - 40-50F
