The Reaper - Red Harvest Ale

A big, floral harvest ale made with home grown Cascades.

Type: All grain Size: 5.2 gallons
Color:
26 HCU (~14 SRM)
Bitterness: 75 IBU
OG: 1.085 FG: 1.012
Alcohol: 9.4% v/v (7.4% w/w)
Water: Tap water with 1 TBS 5.2 Mash Stabilizer and 1 tsp gypsum.
Grain: 10 lb. American 2-row
1 lb. American crystal 80L
8 oz. Melanoidin Malt
2 lb. American Vienna
1 lb. American Munich
Mash: 80% efficiency
Mash grains at 153°F for 60 min. Bring to 170°F and rest for 10 min. Fly sparge with 170°F water to collect 6.5 gal in brewpot.
Boil: 60 minutes SG 1.068 6.5 gallons
8 oz. Wildflower Honey
1 tsp Irish Moss (rehydrated) last 15 minutes, add honey last 2 minutes.
Hops: 1 oz. Cascade (Homegrown) (6% AA, 60 min.)
1 oz. Centennial (10.5% AA, 60 min.)
1 oz. Cascade (Homegrown) (6% AA, 30 min.)
1 oz. Cascade (Homegrown) (6% AA, 15 min.)
1 oz. Cascade (Homegrown) (6% AA, 2 min.)
1 oz. Centennial (10.5% AA, 2 min.)
Yeast: White Labs 007, Dry English Ale in a 1 qt starter.
Log: This is my second try on this recipe. The first one got a bug and went bad. A real bummer to pour 5 gallons of hard work down the drain. But if at first you don't succeed...

So I made a nice starter with 007 instead of 001. The 007 WILL be the dominant force in this fermentation...
Carbonation: Keg and force carbonate.
