Saisoff - Snow Blower Beer

My first Saison, brewed one day after the first snowfall, which ocurred on 10/10/09 (yikes)

Type: Extract w/grain Size: 5 Imp. gal.
Color:
9 HCU (~7 SRM)
Bitterness: 23 IBU
OG: 1.052 FG: 1.008
Alcohol: 5.6% v/v (4.4% w/w)
Water: Soft, filtered water.
Grain: .5 lb. Belgian pale
.5 lb. Wheat malt
3 oz. American crystal 10L
.3 oz. Belgian chocolate
Steep: Steep for 15-20 between 120° and 170°
Boil: 75 minutes SG 1.040 6.5 Imp. gal.
3 lb. Light malt extract
3 lb. Light dry malt extract
1 lb. Belgian candi sugar (liquid)
One Whirlfloc tab at 15.
1 Lb light belgian candi sugar at 15.
1/2 oz coriander (whole) at knockout
Hops: 1.5 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
Yeast: Use White Labs Saison II (seasonal) and Delirium Tremens yeast harvested from four bottles - stepped up four times.
Log: Brewed 10/11/2009, primary ferment seven days at 68°, secondary 14 days at 68°
Carbonation: 5 oz corn sugar at bottling
