Highland Ale

Type: All grain Size: 5.5 gallons
Color:
28 HCU (~15 SRM)
Bitterness: 17 IBU
OG: 1.050 FG: 1.012
Alcohol: 4.8% v/v (3.8% w/w)
Grain: 8 oz. Honey Malt
8 oz. American Munich
1 lb. American crystal 40L
8 oz. American crystal 120L
2 oz. British pale chocolate
7 lb. British pale
Mash: 77% efficiency
Mash at 154°
Boil: minutes SG 1.042 6.5 gallons
Boil for 90 minutes. Can also boil 2 gallons separate down to 1 qt to caramelize and then add to main boil.
Hops: 1.125 oz. Fuggles (4.6% AA, 60 min.)
Yeast: Usually would use Wyeast 1728. Used S-05 in this batch.
Log: 8 days primary @ 68F. 8 secondary @ 68F. Cold condition for a month to clear it up.
Carbonation: medium carbonation.
Tasting: Exhibited a surprising roasty, almost smoky note, assumably from the chocolate malt as did not use my usual WY1728. Caramel notes appropriate and just to malt side of balance. Fairly light bodied with a slightly drying sensation, again assumed from the roast. A very nice beer in honor of the life of a great person and friend.
