Honey my Saison

This is a wonderful refreshing farm style ale. The higher alcohol dries out the finish despite the large amt of malt and relatively low IBU. The White Labs yeast blend gives flavor notes similar to spiced Saisons I've done before.

Type: Extract w/grain Size: 5 gallons
Color:
30 HCU (~16 SRM)
Bitterness: 10 IBU
OG: 1.084 FG: 1.014
Alcohol: 9.0% v/v (7.1% w/w)
Water: 60 min boil
Grain: 8 oz. Belgian biscuit
2 lb. Belgian CaraVienne
Steep: steep all grains approx.45 min medium flame till reachs 160 degrees
Boil: 60 minutes SG 1.209 2 gallons
3 lb. Light dry malt extract
3 lb. Amber dry malt extract
4 oz. Corn sugar
2 lb. 8 oz. Honey
1/2 tsp irish moss last 15 min of boil
Hops: 1 oz. Willamette (5% AA, 60 min.)
1 oz. Willamette (5% AA, 45 min.)
1 oz. Saaz (3.75% AA, 30 min.)
Yeast: White Labs WLP 568 in starter solution prepared 24 hrs b4 brew
Log: 2 weeks primary
1 wk secondary
Carbonation: prime with 8 oz of honey
Tasting: My favorite Saison so far. Very clean, spicy and refreshing. Similar in flavor to Saison Dupont but more copper color
