Steep: Steep for 20 minutes at 155°F
Boil: 60 minutes SG 1.102 2.5 gallons
600g Corn sugar
2.45kg Light malt extract
Add extract when temperature reaches 185°F
Add 200g lactose final 15 minuters
Hops: 12g Northern Brewer (8.5% AA, 60 min.)
6g Cluster (7% AA, 30 min.)
6g Fuggles (4.75% AA, 15 min.)
Yeast: Wyeast 1084 Irish Ale: Slight residual diacetyl and fruitiness; great for stouts. Clean, smooth, soft and full-bodied. Apparent attenuation: 71-75%. Flocculation: medium. Optimum temp: 62°-72° F
