Total Assumption IPA

Trying to clone Ninkasi Total Domination. Going to try steeping
sugars at end of boil to get more hops and a lighter color.

16 HCU (~10 SRM)
Bitterness: 96 IBU
OG: 1.056 FG: 1.015
Alcohol: 5.3% v/v (4.1% w/w)
Water: Portland, Oregon tap water, gets great results every time!
Grain: 1 lb. American Munich
8 oz. American crystal 60L
Steep: Steep grain in bag, squeeze bag at end of steep to get all the goodness
Boil: 60 minutes SG 1.051 5.5 gallons
7 lb. Light malt extract
Hops: 1 oz. Summit (10.5% AA, 60 min.)
1 oz. Centennial (10.5% AA, 30 min.)
1 oz. Summit (10.5% AA, 15 min.)
1 oz. Amarillo (8.5% AA, 15 min.)
1 oz. Centennial (aroma)
1 oz. Amarillo (aroma)
Yeast: WY 1968 or equivalent. From good sources this is what Ninkasi uses.
