Color:
21 HCU (~12 SRM)
Bitterness: 77 IBU
OG: 1.076 FG: 1.020
Alcohol: 7.2% v/v (5.7% w/w)
Water: Pre-boil 3.5 gallons of water the night before and allow to cool. This water will be added to the wort when moving to your primary fermenter.
Grain: 4 oz. American victory
1 lb. 0 oz. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
4 oz. Flaked rice
Steep: Pour grains into muslin sack and tie knot at top of back to ensure grains can freely circulate within the sack.
Boil: 60 minutes SG 1.126 3 gallons
9 lb. 8 oz. Light malt extract
This brew uses the "extract late". At the beginning of boil, only add 4 lbs of the LME. Add the remaining LME with 20 minutes remaining. This will boost your hop utilization while ensuring the LME is sufficiently boiled/broken down. Also, add irish moss last 20 minutes of boil.
Hops: 1.5 oz. Simcoe (12.2% AA, 60 min.)
.5 oz. Simcoe (12.2% AA, 45 min.)
.5 oz. Cascade (7.5% AA, 30 min.)
.5 oz. Cascade (7.5% AA, 15 min.)
.5 oz. Simcoe (12.2% AA, 15 min.)
Yeast: Wyeast 1056
