A Special Nuptial IPA

Beer: A Special Nuptial IPA Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
13 HCU (~8 SRM)
Bitterness: 46 IBU
OG: 1.064 FG: 1.012
Alcohol: 6.7% v/v (5.3% w/w)
Water: 1 tps - water crystals
Grain: 1 oz. American chocolate
1 lb. Flaked rice
1 lb. Flaked wheat
Steep: Add grains to muslin sack.
Steep in 1.5 gal of water @ 65C for 45 min.
Lifted sack into colander above brew pot.
Slokly rinsed 1 gal of 78C water through sack.
Boil: 60 minutes SG 1.128 2.5 gallons
5.5 lb. Light dry malt extract
1 lb. Honey
1 tsp - Irish moss
Hops: 2 oz. Saaz (5.8% AA, 60 min.)
1 oz. Saaz (5.8% AA, 45 min.)
1 oz. Saaz (5.8% AA, 30 min.)
1 oz. Saaz (5.8% AA, 15 min.)
Yeast: Wyeast 1762XL Belgian Abbey II Smack Pack.
Added 25 drops of Beano to the fermenter.
Log: Allow 7 days for primary fermentation using blow-off air lock.
Transfer to secondary. Add 1 tbs of finings gel to cup of
cold water. Allow to swell 30 minutes. Heat to 82C then cool
to 30C before adding to secondary. Topped to 5 gallons with
cold water. Insert std air lock. Allow to ferment and settle
another 7 days.
Carbonation: 1 tbs of cane sugar to prime and the beano does the rest.
