Creepy Uncle Dunkel

Nothing like a nice stein full of dunkelweizen on a crisp fall evening. Prost!

Type: All grain Size: 5.2 gallons
Color:
35 HCU (~17 SRM)
Bitterness: 14 IBU
OG: 1.042 FG: 1.010
Alcohol: 4.1% v/v (3.2% w/w)
Water: 1 TBS 5.2 Mash Stabilizer and 1 tsp gypsum in mash water.
Grain: 4 lb. Raw wheat
2 lb. German Vienna
2 lb. German Dark Munich
3 oz. American chocolate
1.5 oz. American black patent
8 oz. Belgian CaraMunich
Mash: 70% efficiency
Mash Grains in 153°F water at 1.3 qt per pound. (Place room temp grains in cooler, then heat 167°F water). Sparge with 170°F water to attain 6.5 gal.
Boil: 60 minutes SG 1.033 6.5 gallons
1 tsp Irish Moss for last 15 minutes of boil.
Hops: .5 oz. Sterling (5.3% AA, 60 min.)
.25 oz. Hallertau Tradition (5.8% AA, 15 min.)
Yeast: White Labs 300 - Hefeweizen
Log: Primary fermentation at 65°F for 1 week. Secondary fermentation at 60°F for two weeks.
Carbonation: Keg and force carbonate.
