Aniversary Lambic

This beer is going to be the second wedding anniversary beer produced on our sixth year. This same recipe will be made in the following three years to produce a blended gueze.

Beer: Aniversary Lambic Style: Belgian Lambic
Type: All grain Size: 5 gallons
Color:
5 HCU (~5 SRM)
Bitterness: 64 IBU
OG: 1.060 FG: 1.056
Alcohol: 0.5% v/v (0.4% w/w)
Water: Water from home R/O system with gypsum added to harden the water to somewhat replicate the hard water of the Lambeek region of Belgium.
Grain: 6 lb. Belgian pale
4 lb. Wheat malt
Mash: 80% efficiency
Infusion mash for 90 minutes at 150 F in a five gallon "El Cheepo" mash/lauter tun
Boil: 60 minutes SG 1.046 6.5 gallons
Irish Moss added last 15 min of boil-1 tsp
Gypsum added last 15 min of boil-1 tsp
Hops: 4 oz. Hallertauer Hersbrucker (5% AA, 60 min.)
Yeast: Wyeast 3278 - Belgian Lambic Blend
Log: Age for one year
Oaked with French Oak Medium Toast chips in primary fermentation, rack to carboy for secondary fermentation will not rack until bottling
