Poor Man's Pale

2 lbs of 6-row (at 160 linter) has enough enzimes to convert up to 4.3 lbs of rice, so this recipe is at the limit of these proportions without effecting the ABV.

2 HCU (~2 SRM)
Bitterness: 23 IBU
OG: 1.053 FG: 1.010
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 2 lb. American 6-row
4 lb. Rice (raw)
Mash: 80% efficiency
Presoak rinsed, short grain overnight in enough water to cover 3 inches. Add soaked rice to 3 gallons boiling water and cook until tender (proteins are gelatinized). Cool to below 160F before adding malt and hold at 150-160 for 2 hours to convert all rice starch.
Boil: 30 minutes SG 1.061 3 gallons
Hops: 1 oz. Centennial (10.5% AA, 15 min.)
Yeast: Trappist Ale yeast (leftover from previous batch of pale ale).
