Type: Extract w/grain Size: 5.5 gallons
Color:
22 HCU (~12 SRM)
Bitterness: 26 IBU
OG: 1.053 FG: 1.014
Alcohol: 5.1% v/v (4.0% w/w)
Water: Steeping water: Mix 1 gallon tap water with 1 gallon of distilled water because of high residual alkalinity. Add 1/4 tsp. sodium chloride.
Use all tap water following steep as residual alkalinity doesn't matter for extract brews.
Grain: 1 lb. 0 oz. American crystal 60L
0 lb. 2 oz. American crystal 120L
Steep: Steep grains in treated water at 155°F for 45 minutes. Tea bag a few times and let grain bag drip until it stops.
Boil: 60 minutes SG 1.062 4.75 gallons
6 lb. 0 oz. Northwestern Gold dry malt extract
Add a Whirlfloc tablet with 10 minutes remaining in the boil.
Note only 5.75lbs of extract is boiled. The other 0.25lbs is contributed by the starter.
Aroma hops added at flameout.
Hops: 33g Cascade (5.4% AA, 60 min.)
28.4g Cascade (5.5% AA, 15 min.)
24g Cascade (aroma)
Yeast: Yeast starter made ~24 hours prior to brew
Wyeast 1056 American Ale Activator
Activated package 3 hours prior to making starter
4oz. gold dry malt extract boiled with 7 1/4 cups water (~4.75 cups after boil and cool)
Cooled to 70°F and placed in a 1 gallon pickle jar
Pitched yeast, covered with foil
Kept at room temperature (~67°F) swirling occasionally
Log: Primary fermentation 11 days at ~67°F in plastic bucket
SG after primary 1.015 adjusted for temperature
Secondary fermentation 17 days at ~67°F in 5 gallon Better Bottle
Carbonation: 2.5 volumes Corn Sugar: 125g for 5 gallons @ 68°F
Carbonation volume calculations:
Estimated volume in secondary: 5.125 gallons (a quart below max)
Predicted trub left in secondary: 0.225 gallons
Predicted priming syrup: 0.1 gallons (2 cups minus boil off)
Predicted beer bottled: 5.125 - 0.225 + 0.1 = 5 gallons

Tasting: Racking to secondary: Perfect!
Bottling: Perfect!
Tasted after in the bottle for about 4 weeks and fridge for about 2 weeks. This is a pretty good beer. There is a bitterness that is slightly unpleasant about 2 seconds after I swallow. Not sure what that's from.
