Bitterness: 18 IBU
OG: 1.073 FG: 1.022
Alcohol: 6.6% v/v (5.2% w/w)
Water: 1 tsp gypsum, 1 Tbs 5.2 mash stabilizer
Grain: 10 lb. American 2-row
1 lb. British chocolate
1 lb. American crystal 80L
2 lb. Flaked oats
Mash: 73% efficiency
Single infustion mash at 156F with 1.2 qt per pound. Continuous sparge with 180F water to attain 6.5 gal in brewpot.
Boil: 60 minutes SG 1.062 6.5 gallons
1 lb. Lactose
1 tsp Irish Moss last 15 minutes.
Hops: 1 oz. Fuggles (4% AA, 60 min.)
.5 oz. UK Golding (4.8% AA, 30 min.)
Yeast: WLP005 in a 1 quart starter.
Log: 7 to 14 days primary at 70F (until terminal gravity is reached). This is a VERY flocculant yeast strain. If fermentation is slow, rouse yeast. It will be worth it.
Carbonation: Keg and force carbonate with 75% N 25% CO2 blend, served at approximately 30 PSI through a stout faucet.
