Bitterness: 78 IBU
OG: 1.066 FG: 1.014
Alcohol: 6.7% v/v (5.3% w/w)
Water: 1 tsp gypsum and 1 TBS 5.2 for mash.
Grain: 10 lb. American 2-row
8 oz. American victory
8 oz. Belgian biscuit
1 lb. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
153°F for 60 min, sparge with 180°F to collect 6.5 gal.
Boil: 60 minutes SG 1.056 6.5 gallons
1 lb. Brown sugar
1 tsp Irish moss last 15 minutes, 1 lb brown sugar last 5 minutes.
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
1 oz. Chinook (12% AA, 45 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Cascade (aroma)
1 oz. Centennial (aroma)
1 oz. Chinook (aroma)
Yeast: Wyeast Ringwood ale from a prior batch.
Carbonation: Keg and force carbonate
