this is a 10 gallon version of my belgian triple which turned out fantastic

10 HCU (~7 SRM)
Bitterness: 41 IBU
OG: 1.077 FG: 1.016
Alcohol: 7.8% v/v (6.2% w/w)
Water: carbon filtered tap water
Grain: 20 lb. Belgian Pilsner
1 lb. Belgian aromatic
1 lb. American crystal 20L
1 lb. Belgian CaraVienne
Mash: 80% efficiency
multi rest mash as followes 30 minutes at @ 104, 30 minutes @ 140 and 60 muinutes at 158
Boil: 120 minutes SG 1.064 12 gallons
2 lb. Belgian candi sugar
1 teaspoon coriander
1 0z sweet orange
irish moss
at 15 minutes
Hops: 1 oz. Brewers Gold (8.5% AA, 60 min.)
.5 oz. Brewers Gold (8.5% AA, 45 min.)
1 oz. Brewers Gold (8.5% AA, 30 min.)
3 oz. Styrian Goldings (5.5% AA, 15 min.)
Yeast: mix of WLP 500 trappist ale and california ale WLP 051 preferablly from a secondary fermentation of another beer.
Log: brewed on posting date, went to secondary one week later transfered 5 gallons to a third fermentation and the other five to bottles with 1/2 cup cane sugar on 7/19/09
