Grain: 8 oz. American victory
8 oz. American crystal 10L
8 oz. Dextrine malt (Cara-Pils)
Steep: steep grain for 30 min in 2 gal of water at 150° . Rinse with 1 gal of 170° water.
Boil: 60 minutes SG 1.118 3 gallons
6.6 lb. Briess Pilsen Light LME
1 lb. Briess Golden Light DME
1 lb. Briess Sparkling Amber DME
1 tsp Irish Moss last 15 min of boil.
Hops: 1 oz. Yakima Magnum (14% AA, 60 min.)
1 oz. Warrior (15% AA, 60 min.)
1 oz. Ahtanum (8% AA, 45 min.)
1 oz. Vanguard (6% AA, 30 min.)
1 oz. Willamette (5% AA, 15 min.)
2 oz. Cascade (aroma)
Yeast: White Labs WLP007 Dry English Ale
Log: Primary for 10 days. Rack two secondary for 14 days with 2 oz of Cascade leaf hops.
Carbonation: Prime with 1 cup Briess Pilsen light DME.
