Sunny Beach Wheat

Beach time again. This is a family favorite

Beer: Sunny Beach Wheat Style: American Wheat
Type: Extract w/grain Size: 5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 14 IBU
OG: 1.060 FG: 1.004
Alcohol: 7.3% v/v (5.7% w/w)
Water: 1 tps - water crystals
Grain: 1 lb. Wheat malt
Steep: Add grains to muslin sack.
Steep in 1.5 gal of water maintained at 65C for 45 minutes.
Slowly rinsed 1 gal of 78C water through sack in colander above boil pot.
Boil: 60 minutes SG 1.121 2.5 gallons
6.6 lb. Wheat extract
1 lb. Honey
1 tsp - Irish Moss
The peel of 6 large fresh oranges was added to the boil for the last 30 minutes in a muslin sack.
Hops: 1 oz. Kent Goldings (5% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast 1010XL American Wheat Yeast smack pack.
The peel of 2 fresh oranges was finly chopped and placed in a muslin
sack and added to the fermenter. Added 25 drops of beano to the
fermenter.
Log: Allow 7 days for primary fermentation using blow-off fermenter. Must
use a blow-off fermenter, the beano makes the intial fermentation
kick. Transfer to secondary. Add 1 tbs of finings gel to cup of cold
water and allowed to swell for 30 minutes. Heated to 82C then cooled
to 30C before adding to secondary. Topped to 5 gallons with coldwater.
Insert standard air lock. Allow to ferment another 7 days.
Carbonation: 1 Tbs cane sugar to prime beano does the rest. Cut sugar in half
since I will package in small kegs
Tasting: The plan is to take a keg to the beach for happy hour and watch the
tide come in. Who will float first, the keg or us? GAME ON!
