Brewed for the 2009 Fourth of July Celebration in Shunk PA!

Beer: Amber Waves of Grain Style: American Pale Ale
Type: All grain Size: 5.5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 36 IBU
OG: 1.057 FG: 1.010
Alcohol: 6.1% v/v (4.8% w/w)
Water: 1 Tablespoon 5.2 mash stabilizer, 1 tsp gypsum.
Grain: 9 lb. American 2-row
8 oz. American victory
1 lb. American crystal 20L
8 oz. Dextrine malt (Cara-Pils)
8 oz. American crystal 60L
Mash: 75% efficiency
Mash grains at 153°F for 60 minutes using 1.3 qt per pound. Continuously sparge with 180°F water to attain 6.5 gal in brewpot.
Boil: 60 minutes SG 1.048 6.5 gallons
1 tsp Irish Moss last 15 minutes of boil. .5 oz Amarillo hops at flameout.
Hops: 1 oz. Amarillo (8.2% AA, 60 min.)
.5 oz. Amarillo (8.2% AA, 15 min.)
1.5 oz. Amarillo (aroma)
Yeast: Wyeast 1187 - Ringwood Ale™ from previous batch.
Log: Primary at 70°F for 5-10 days until activity ceases. Dry hop in secondary fermenter with 1 oz whole Amarillo hops. Allow 14 days in secondary.
Carbonation: Keg and force carbonate.
