Purple Mountains' Majesty

Brewed for the 2009 Fourth of July festivites in Shunk PA!

Beer: Purple Mountains' Majesty Style: American Wheat
Type: All grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 7 IBU
OG: 1.051 FG: 1.010
Alcohol: 5.3% v/v (4.2% w/w)
Water: 1 Tablespoon 5.2 Mash Stabilizer and 1 tsp gypsum.
Grain: 7 lb. American 2-row
8 oz. Gambrinus Honey Malt
8 oz. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
1 lb. Flaked wheat
Mash: 70% efficiency
Mash grains at 153°F for 60 minutes using 1.3 qt per pound of grain. Continuously sparge w/ 180°F water to attain 6.5 gal.
Boil: 60 minutes SG 1.044 6.5 gallons
1 lb. Black Locust Honey
Add 1 tsp Irish Moss last 15 minutes of boil. Add honey just before flameout.
Hops: .5 oz. Tettnang (4.00% AA, 60 min.)
.5 oz. Tettnang (aroma)
Yeast: Wyeast 1187 - Ringwood Ale™
Log: Primary at 70°F for 5-10 days until activity subsides. Transfer to secondary adding 1 49 oz can Oregon Fruit Blueberry Puree and 2 tsp pectic enzyme. Allow 14 days in secondary at 70°F.
Carbonation: Keg and force carbonate.
