Fat Boy Wheat

I normaly like to use german tradition for bitter and a U.S. Saaz for a good 15 minute.

Type: All grain Size: 5 gallons
Color:
5 HCU (~5 SRM)
Bitterness: 984 IBU
OG: 1.059 FG: 1.011
Alcohol: 6.2% v/v (4.9% w/w)
Water: boiled water, with gypsum added before the water is heated. you need to have a nice and hard water.
Grain: 4.0 lb. British pale
5.0 lb. Wheat malt
.25 lb. 4 oz. Belgian Munich
.50 lb. 8 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
I mash my grains with a pound of rice hulls for 90 minutes.
Boil: 60 minutes SG 1.049 6 gallons
depending on how clear the wort is i use moss, but definatly not on a wheat ale.
Hops: 60 oz. Hallertauer (4.25% AA, 60 min.)
15 oz. Saaz (3.75% AA, 15 min.)
Yeast: wyeast 1056. American ale
Carbonation: I just use dextrine.
Tasting: maybe more citrus and less earthy. more of a fruity yeast.
