La Grasa de Gato Cerveza

I normally do all grain brewing, but recieved a bag of Northwest Gold malt extract for my birthday, so it needed to be used. Why the reference to a fat cat? Our family pet was killed the day before, and we burried him under my hop plants.

Type: Partial mash Size: 10 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 40 IBU
OG: 1.074 FG: 1.012
Alcohol: 8.0% v/v (6.2% w/w)
Water: Carbon filtered tap water. The water quality in Memphis is some of the best in the nation.
Grain: 15 lb. American 2-row
3 lb. American crystal 40L
Mash: 75% efficiency
I was pressed for time, so mashing at 158 degrees for only 60 minutes. Sparged the remainder of the 11 gallon volume at 172 deg.
Boil: 60 minutes SG 1.067 11 gallons
6.6 lb. Amber malt extract
Hops: 1 oz. Chinook (12% AA, 60 min.)
1 oz. Chinook (12% AA, 30 min.)
1 oz. Chinook (12% AA, 15 min.)
1 oz. Chinook (aroma)
Yeast: rehydrated 1056 in the erlinger flask with 4 Tbs. corn sugar.
Log: Last hop interval was 1 oz. Chinook dry hopped in the carbouy.
Carbonation: Since it makes two kegs, I force carbonate the first and use 3/4 cup corn sugar to prime the other 5 gal. keg.
Tasting: Would recommend using a lighter LME next time.
