Honey Amber

Version 2 of this beer. the original was extract and specialty grain and was good enough to inspire me to do a mini-mash version.

Actual grain bill has malted rye instead of flaked rye, honey malt (gambrinus) for the 20 L American crystal and Caramunich 1 for the British Carastan.

Alcohol: 7.4% v/v (5.8% w/w)
Water: 2 tsp gypsum
1/4 tsp table salt
Grain: 3 lb. American 2-row
1 lb. American crystal 20L
4 oz. Dextrine malt (Cara-Pils)
4 oz. British Carastan
1 lb. Flaked rye
Mash: 70% efficiency
stove top infusion mash using 1.5 gal 150°f mash and 2 gal 180°f sparge water for 5.5 lb of grain.
Boil: 60 minutes SG 1.086 4 gallons
3.3 lb. Light malt extract
2 lb. Honey
whirlfloc tablet & yeast nutrient at 10 minutes
Hops: 1 oz. Cascade (7% AA, 60 min.)
.5 oz. Cascade (7% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast: Wyeast 1056 smack pack. Direct pitch
Carbonation: 2.3 volumes Corn Sugar: 4.00 oz. for 4.75 gallons @ 75°F
Tasting: All extract version is very smooth and drinkable after 2 weeks in the bottle. Nicely balanced between malt & hops, neither dominate. Good summer beer. the only thing I am changing about this recipe is converting it to a mini-mash and tweaking the grains. I am doubling the malted rye to a full pound and reducing the caramunich 1 by half to 4 oz.
