Brewer: S.K. Murphy Email: -
Beer: 11:11 Style: Brown Porter
Type: Extract w/grain Size: 5.5 gallons
Color:
84 HCU (~31 SRM)
Bitterness: 18 IBU
OG: 1.057 FG: 1.010
Alcohol: 6.1% v/v (4.8% w/w)
Water: Atlanta city water!
Grain: 8 oz. American crystal 60L
6 oz. Flaked oats
8 oz. American chocolate
Steep: Placed grains in a bag and steeped them in 2.5 gal of water until it was almost boiling, then moved grains to a 2 quart pot of 170F water to rinse for 20 minutes. Brought the 2.5 to a boil while the grains soaked in the other pot and added malt extracts and other fermentables; then added the "sparge" water once it had soaked for a while. Added first addition hops as soon as everything came to a boil.
Boil: 75 minutes SG 1.105 3 gallons
5 lb. 12 oz. Dark malt extract
5 oz. Brown sugar
14 oz. Turbinado sugar
8 oz. Honey
8 oz. Date sugar
Hops: 1 oz. Willamette (4.3% AA, 75 min.)
1 oz. Willamette (4.3% AA, 15 min.)
Yeast: Munton's Ale Yeast
Log: Kept on the primary for 8 days, then bottled (this beer needed to be done in a hurry for a party).
Carbonation: 3/4 Cup Corn Sugar
Tasting: Mild, warm, and raisin-like. This beer is definitely on the delicate side, which is interesting for a dark beer and definitely unusual for me to brew. I won't make this one again; I prefer my beers to be a little sharper in flavor, but it did come out pretty nice.
