Malt to the max on this ,slap you in the face, amber . Nicely hoped too . some of my favorites come from this combo of hops or avaiblr subs but gota have the amarillo for the amber.. and like ben said " beer is proof that god wants man to prosper " i think he was drinking this ale ...

Color:
63 HCU (~26 SRM)
Bitterness: 13 IBU
OG: 1.077 FG: 1.012
Alcohol: 8.4% v/v (6.6% w/w)
Water: Tap water cold ... 7 grains of pink sea salt from hawaii
Grain: 1 lb. British crystal 50-60L (pre milled)
1 lb. British crystal 135-165L (milled on brewdate)
Steep: bring 2gal. of water to a boil steep each grain in its own grain bag for 30 min with flame out and a cover on it.
Boil: 60min minutes SG 1.213 2 gallons
9 lb. 9 oz. Amber malt extract
0 lb. 7.143 oz. Light dry malt extract (for starter)
0 lb. 8.857 oz. Light dry malt extract (for boil)
added all extract after second flame out, dry and wet reboil start time when boil rereached add all hopsby scedule,; but amarillo2 and cascade (reserve for dry hopping) Irish moss 1tsp last 15 min of the boil . added aroama hop last 2 min
Hops: .5 oz. U.K. Pilgram (11% AA, 60 min.)
.5 oz. U.K. Pilgram (11% AA, 45 min.)
.5 oz. Amarillo (8% AA, 30 min.)
.5 oz. U.K. First Gold (7% AA, 10 min.)
.5 oz. Amarillo (8% AA, 10 min.)
1 oz. Cascade (whole leaf) (aroma)
.5 oz. U.K. First Gold (aroma)
1 oz. Amarillo2 (aroma)
Yeast: the light D.M.E is used for the starter . 200 gm. total boiled in 2 qt. water for 10 min cooled to 70 degrees added swelled slap pack ..Wyeast 1272 american ale 2.. brewed starter for 24hr s in a growler with a blow off tube.
Log: started in a 6.5 gal. racking to a 5 gal carboy after 1 week . adding 1 oz cascade at start of secondary plus 1 oz heavy toasted oak chips( steamed to sanitize).let finish secondary for 1 -2 weeks Added note 4/3: went a little hoppy on the racking added the 1oz. of cascade and the oak but also some more amarillo pellets in a hop bag. a tasting note is great almost like 90 min dogfish head but hoppyier letting sit from rack @ 4/2/09 to at least 4/10/09 before bottleing maybee another week for settlingfirst though willl update.havent decided on 22oz. or 12oz. yet either got both so Co2 may bee changed accordingly
Carbonation: 2.2 volumes Corn Sugar: 3.59 oz. for 5 gallons @ 68°F
