Torrified Wheat Ale

This was supposed to be a cream ale (malt liquor)
recipe but the shop was out of flaked maize.
I used Torrifed Wheat in the mash instead. It is a slightly
"pufffed up" unmalted kernel that can be added to the mill
and crushed with the malt. It worked out well.

4 HCU (~4 SRM)
Bitterness: 17 IBU
OG: 1.055 FG: 1.007
Alcohol: 6.2% v/v (4.9% w/w)
Water: Tulsa, OK tap water, carbon filtered to remove chlorine.
Grain: 5.75 lb. American 2-row
2.75 lb. American 6-row
2 lb. Torrified wheat
Mash: 76% efficiency
2 step infusion. Protein rest at 132°F for 30 minutes.
Saccrification rest at 155°F for 60 minutes.
Mashout at 168°F 10 minutes
Batch Sparge
Boil: 75 minutes SG 1.043 7 gallons
5 oz. Corn sugar
Irish Moss at 15 minutes before flameout
Hops: .5 oz. Cluster (7% AA, 60 min.)
1 oz. Cluster (7% AA, 5 min.)
Yeast: Fermentis US-05 (US-56)
Carbonation: Force carbonated to 3.0 Volumes
Tasting: Pretty good brew. Low esters, great head retention
and good malty/grainy flavor. Hops balance nicely.
