Bee Dang Good

Excellent and easy beer that satisfies almost all tastes.

Type: Extract w/grain Size: 5.5 gallons
Color:
5 HCU (~4 SRM)
Bitterness: 27 IBU
OG: 1.049 FG: 1.010
Alcohol: 5.1% v/v (4.0% w/w)
Water: Local mineral spring water - not tap
Grain: 8 oz. American 2-row
8 oz. American Munich
Steep: 30 minutes at 155 - lightly squeezed out and brought to boil.
Boil: 60 minutes SG 1.090 3 gallons
3.5 lb. Light malt extract
3 lb. Honey
Hops: 1 oz. Cascade (6% AA, 60 min.)
1 oz. Centennial (10.5% AA, 15 min.)
Yeast: Wyest 1056 (American Ale) - Activator
Log: Fermentation temp at 65 for 6 days in primary - 3 weeks in secondary. A little extra time in the secondary cleans it out. Ferment at lower temps to "crisp up" the beer.

Primed with 3/4 corn starch in bottle bucket and racked to bottles - three more weeks minimum.
Carbonation: 2.5 volumes Corn Sugar: 4.71 oz. for 5.5 gallons @ 65°F
Tasting: Really clean and crisp ale - sorta like a steam bear crossed with a ESB. Favorite of most guests.
