Type: Extract w/grain Size: 5 gallons

121 HCU (~40 SRM)
Bitterness: 13 IBU
OG: 1.077 FG: 1.016
Alcohol: 7.8% v/v (6.1% w/w)
Water: Used 3 gallons of Ice Mountain natural Spring Water for the boil, and 3 Gallons of reverse Osmosis water prior to pitching the yeast.
Grain: 1 lb. American crystal 90L
1 lb. 4 oz. Belgian Special B
4 oz. Roasted barley
Steep: 155° for 45 mins.
Boil: 90 minutes SG 1.153 2.5 gallons
2 lb. 8 oz. Light malt extract
7 lb. Amber malt extract
Irish Moss at 15 mins.
Hops: 1 oz. Styrian Goldings (5.5% AA, 60 min.)
1 oz. Styrian Goldings (5.5% AA, 30 min.)
Yeast: Wyeast 1728.
Log: Eight days primary and 18 Days of secondary fermentation @ 60 - 64°.
Carbonation: Used 4 oz of wildflower honey to prime for 7 days.
Tasting: Excellent Beer. Still a little sweet for my tastes. Considering a longer primary fermentation, and /or more bittering hops.
