Barrington Tripel

I have tried to make something close to Westmalle Tripel before. One was too dark, one too sweet and undercarbonated. I will use the westmalle strain and pitch a lot of yeast.

Type: All grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 40 IBU
OG: 1.080 FG: 1.016
Alcohol: 8.2% v/v (6.5% w/w)
Water: spring water
Grain: 10 lb. German Pilsner
1 lb. Wheat malt
1 lb. German Vienna
.5 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
step mash , 122, 155,170
Boil: 90 minutes SG 1.050 8 gallons
1 lb. Belgian candi sugar
1 tsp orange peel and 1 tsp coriander. Irish moss at 15 min to go.
Hops: 1 oz. Perle (8% AA, 90 min.)
1 oz. Styrian Goldings (2% AA, 30 min.)
.5 oz. Saaz (3.75% AA, 30 min.)
.5 oz. Saaz (aroma)
Yeast: wyeast 3787 Trappist high gravity
Log: will update
Carbonation: natural carbonation in a keg with 3/4 cup corn surgar.may add fresh yeast and bottle some of it.
