Steamboat IPA

I am brewing this for a ski trip to Steamboat Springs in Feb 2009. My original IPA (Angus IPA) just didn't hit the mark. A good beer, but not quite perfect. I'm mixing up my ingredients a bit on this one.

Beer: Steamboat IPA Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
17 HCU (~10 SRM)
Bitterness: 56 IBU
OG: 1.056 FG: 1.015
Alcohol: 5.3% v/v (4.2% w/w)
Water: Use tap water set out overnight or at least for a few hours to let the chlorine dissapate a bit. I usually add 1/4 tsp gypsum pre-boil.
Grain: 8 oz. American 2-row
8 oz. American victory
8 oz. American crystal 60L
Steep: Grains are put in a grain bag and set in a gallon of 145° and put in oven to keep temp. Another gallon of water is put in oven as well to use for sparge. After an hour the bag is put in a collander over the brew pot and I sparge slowly with other gallon.
Boil: 60 minutes SG 1.056 5 gallons
7 lb. Light malt extract
1/4 tsp irish moss at 15 minutes.
I brought 3.5 gallons along with 7 pounds of extract to boil, then added the nearly 2 gallons from grain steeping. This brings the total liquid to about 6 gallons which should turn into about 5 gallons of final beer.
Hops: 1 oz. Galena (12.5% AA, 60 min.)
1 oz. Cascade (6.3% AA, 15 min.)
1 oz. Glacier (aroma)
Yeast: Trying something different this time: White Labs WLP023 Burton Ale Yeast (liquid).
Log: For the first time I bought all my ingredients from Northern Brewer instead of my local shop. Specifically, the extract is "Gold" liquid malt extract and the grains are "Briess Victory", "Rahr 2-Row Pale", and "Briess Caramel 60L".
Carbonation: I keg this and carbonate to 2.0.
Tasting: This beer turned out fantastic. Not the really HUGE hoppy IPA I was shooting for but turned out to be a great beer. In fact, my wife told me to brew it again right away. The OG and FG were a bit higher than expected (1.060 and 1.018). The yeast was a great surprise added some really interesting (floral) essence. A hugely drinkable beer. In fact, the keg was emptied in one night up in Steamboat.
