summer white ale

kind of a mixture between a spicy white ale and a summer ale

Color:
4 HCU (~4 SRM)
Bitterness: 17 IBU
OG: 1.046 FG: 1.006
Alcohol: 5.2% v/v (4.1% w/w)
Water: carbon filtered tap water.
Grain: 4 lb. 9 oz. Belgian Pilsner
5 lb. 7 oz. German Pilsner
8 lb. Wheat malt
1 lb. Dextrine malt (Cara-Pils)
2 lb. Flaked wheat
Mash: 62% efficiency
mashed for 1 hour at 152 with 7 gallons of water, sparged at 170 for an hour with 11 gallons of water
Boil: 60 minutes SG 1.044 11 gallons
3 grams of grains of paradise
zest from 2 lemons
1 oz of dried sweet orange
1 oz of coriander
Hops: 3 oz. Hallertauer (1.5% AA, 45 min.)
1 oz. Hallertauer (1.5% AA, 30 min.)
1 oz. hallertauer (8.6% AA, 15 min.)
Yeast: we split this batch in half to ferment one 5 gallon batch got wlp400 and the other got wlp380 they both got 1/2 teaspoon of yeast nutrient and were oxygenated at 10 psi for 5 minutes. No Starter and they both kicked off in less than 24 hours. 3-7-09 transfered the 380 batch because gravity is at .006. and the 400 batch also at .006 3-10-09
Log: brew date is 2-23-09 fermentation temp is between 68 and 72.
Carbonation: bottled 3-21-09 3/4 cup priming sugar
