Alcohol: 5.4% v/v (4.2% w/w)
Water: filtered tap water
Grain: 5 lb. American 2-row
4 lb. Wheat malt
1 lb. American Munich
Mash: 70% efficiency
single infusion mash at 152 with 3.5 gallons, sparge with 170 with 3 gallons 1/2 hour minimum
Boil: 90 minutes SG 1.040 6.5 gallons
all are added with 15 minutes left in the boil
.5 oz of lemon and orange zest
.5 oz of dried plum
.5 tsp crushed grains of paradise
.5 tsp coriander
.25 tsp anise
1tsp vanila
1/8 tsp rose hips
1/8 tsp hibiscus
1/8 tsp tamarind
Hops: .5 oz. Tettnanger (4.5% AA, 60 min.)
.5 oz. Tettnanger (4.5% AA, 45 min.)
.5 oz. Tettnanger (4.5% AA, 15 min.)
1 oz. Tettnanger (aroma)
Yeast: a mix of wlp400 and wlp060 with a large starter
