Wild Cat Ale

Starting gravity was actually around 1.052
I have made this beer twice, It is a very clean ale and has been very popular with my fellow beer drinkers

Type: Partial mash Size: 5 gallons
Color:
19 HCU (~11 SRM)
Bitterness: 27 IBU
OG: 1.049 FG: 1.009
Alcohol: 5.2% v/v (4.1% w/w)
Grain: 1 lb. American crystal 60L
Mash: 80% efficiency
Boil: 60 minutes SG 1.123 2 gallons
3 lb. 3 oz. Light malt extract
2 lb. Light dry malt extract
4 oz. Honey
Irish Moss added last 15 min of boil
Hops: 1 oz. Perle (8% AA, 60 min.)
0.5 oz. Perle (8% AA, 30 min.)
0.5 oz. Tettnanger (4.5% AA, 30 min.)
1 oz. Perle (8% AA, 5 min.)
0.5 oz. Tettnanger (4.5% AA, 5 min.)
Yeast: One and a half packets of Safale US - 05
Log: 4oz of Oak chips steamed with water and a dash of scotch added to the the primary fermenter. After 5-7 days in primary move to secondary, add 4oz of oak chips to seconday. 7-10 days in secondary. Bottle condition for 1 month.
Tasting: Smooth ale flavor. Very drinkable, oak chips add a nice warmth.
