6th Ring IPA

Grain bill influenced by Victory's Hop Wallop.
Used a modified continuous hop schedule for Cascades using 2oz leaf.

Bitterness: 101 IBU
OG: 1.058 FG: 1.010
Alcohol: 6.2% v/v (4.8% w/w)
Water: Pittsburgh tap water, mash & sparge
Grain: 10 lb. German Pilsner
2 lb. German Munich
Mash: 70% efficiency
90 minutes ~ 155°f 3.5gal H2O
Fly sparge @ 170° with 5gal H2O
Boil: 75 minutes SG 1.042 7.5 gallons
Continuous hopping of 2oz cascade:
10 min intervals - 70-30min, 1/5 oz
5 min intervals - 25-5min, 1/5 oz
Hops: .5 oz. Cascade (7.4% AA, 75 min.)
.5 oz. Glacier (6% AA, 75 min.)
.5 oz. Simcoe (11.9% AA, 75 min.)
.5 oz. Cascade (7.4% AA, 70 min.)
.5 oz. Cascade (7.4% AA, 30 min.)
.25 oz. Glacier (6% AA, 30 min.)
.25 oz. Simcoe (11.9% AA, 30 min.)
.5 oz. Cascade (7.4% AA, 15 min.)
.25 oz. Glacier (6% AA, 15 min.)
.25 oz. Simcoe (11.9% AA, 15 min.)
Yeast: WL001, 3qt starter w/pils DME
Log: Brewed 1/19
Primary 1/19-1/24 @ 70°...extremely fast fermentation, no off flavors
Secondary 1/24-1/28 @ 70°
Crash cooled to drop out yeast 1/27-1/28.
Kegged 1/28
Tasting: This was supposed to be ready in February, but as it turns out, Superbowl Sunday was good enough.

Great aroma, smooth bitterness...next time, I'll let it age a little more before drinking, but it was awesome...looking forward to making this again soon.
