OG: 1.062 FG: 1.014
Alcohol: 6.2% v/v (4.9% w/w)
Water: Add 1 Teaspoon Gypsum or use spring water.
Grain: 0.5 lb. Dextrine malt (Cara-Pils)
0.5 lb. American 2-row
0.5 lb. American crystal 40L
Steep: Bring grains to 154°. Steep 60 minutes. Remove grains.
Boil: 60 minutes SG 1.099 3.25 gallons
4 lb. Light malt extract
3.3 lb. Extra Light malt extract (or dry)
4 oz. Belgian candi sugar
Add 1 Teaspoon Irish Moss when 15 minutes remain with boil.
Hops: 0.5 oz. Perle (7.0% AA, 60 min.)
0.5 oz. Amarillo (8.0% AA, 60 min.)
0.5 oz. Glacier (6.0% AA, 60 min.)
0.5 oz. Northern Brewer (6.0% AA, 60 min.)
0.5 oz. Perle (7.0% AA, 45 min.)
0.25 oz. Amarillo (8.0% AA, 45 min.)
0.5 oz. Glacier (6.0% AA, 45 min.)
0.25 oz. Northern Brewer (6.0% AA, 45 min.)
0.25 oz. Amarillo (8.0% AA, 30 min.)
0.25 oz. Northern Brewer (6.0% AA, 30 min.)
0.25 oz. Cascade (5.9% AA, 30 min.)
0.25 oz. Cascade (5.9% AA, 15 min.)
0.5 oz. Cascade (aroma)
Yeast: Safale s-04 yeast. Make sure to mix yeast with wort after temp down to 70°.
Log: Ferment @ 69°. Primary 6 days,
secondary 1 week.
Carbonation: 3/4 cup corn sugar at bottling time.
