Negra Modelo Clone

Good Recipe for Negra Modelo CLone. If you want to do a partial mash or extract you can substitute 7.5 lbs oif Amber LME for the Dingemans Pils Malt and steep specialty grains for 30 mintes @ 156.

17 HCU (~11 SRM)
Bitterness: 20 IBU
OG: 1.050 FG: 1.012
Alcohol: 4.9% v/v (3.8% w/w)
Water: I used filtered tap water
Grain: 8.75 lb. Dingman's Pils
5.8 oz. Weyer Cara-Pils III
2.1 oz. Pauls Choc Malt
0.53 lb. Weyer Vienna Malt
Mash: 80% efficiency
Dough in with 168-170 degree water to achieve 156 degree mash.
For 8.25lbs I used 2.5 gallons of water. Thicker is better than thin mash. Mash for 45 minutes then mash out with 4-5 gallons of 200 degree sparge water over 30-45 minutes. COllect 6.5 gallons of wort or less if you want thicker beer.
Boil: 90 minutes SG 1.040 6.5 gallons
90 minute boil. Irish Moss and yeast nurtrient added with 10 minutes left in boil.
Hops: .50 oz. Hallertauer Hersbrucker (3% AA, 90 min.)
.75 oz. Tettnanger (4% AA, 90 min.)
0.5 oz. Tettnanger (4% AA, 10 min.)
Yeast: Wyeast 2124 Bohemian Lager is best
Carbonation: Forced Carb. @ 38 degrees with 25 PSI
Tasting: Awesome Lager. Really a crowd pleaser.
