Light Winter Blonde Half Boil/Half Batch

I downsize all my recipes by about 50% of the 60 minute/5 gal. "standard"...lighter containers (I had rotator cuff surgery, both shoulders)...and less time involved with preparing the wort. Therefore, I use high-alpha acid hops. Each batch yeilds about 16 pints.

Type: Extract w/grain Size: 2.1 gallons
Color:
5 HCU (~4 SRM)
Bitterness: 16 IBU
OG: 1.049 FG: 1.010
Alcohol: 5.0% v/v (3.9% w/w)
Grain: 1 oz. American crystal 40L
Steep: I will add an oz. or two of orange zest during the steep to achieve the Belgian style taste.
Boil: 25 minutes SG 1.046 2.2 gallons
1 lb. Light dry malt extract
1 lb. extra light dry malt extract
.25 lb. sparkling amber dry malt extract
Hops: 0.25 oz. Simcoe (11.5% AA, 20 min.)
.1 oz. Fuggle (aroma)
Yeast: Muntons
