Midnight Moonlight

Beer: Midnight Moonlight Style: Irish Dry Stout
Type: All grain Size: 5.5 gallons
Color:
129 HCU (~42 SRM)
Bitterness: 37 IBU
OG: 1.042 FG: 1.010
Alcohol: 4.1% v/v (3.2% w/w)
Water: 1 TBS 5.2 Mash Stabilizer, 1 tsp gypsum.
Grain: 5 lb. Maris Otter
3 oz. British chocolate
3 oz. British black patent
1 lb. Roasted barley
1 lb. Flaked barley
4 oz. Flaked wheat
Mash: 85% efficiency
Mash 60 min at 153F with 1 qt per pound. Add boiling water until mash reaches 170F, mash out additional 10 minutes. Continuous sparge with 180F water to acheive 7.25 gal.
Boil: 60 minutes SG 1.032 7.25 gallons
Add 1 tsp Irish Moss last 15 minutes.
Hops: 2 oz. Kent Goldings (4.5% AA, 60 min.)
Yeast: White Labs 004 in a 1 quart starter
Carbonation: Keg and force carbonate with 75% Nitrogen, 25% CO2 mix at 35 PSI. Use carbonation stone in keg. Serve through stout faucet.
