2008 Version of Christmas Ale

29 HCU (~15 SRM)
Bitterness: 20 IBU
OG: 1.068 FG: 1.014
Alcohol: 6.9% v/v (5.4% w/w)
Grain: 8.5 lb. British pale
2 lb. German Munich
1 lb. Belgian aromatic
.5 lb. British crystal 50-60L
.25 lb. Belgian Special B
Mash: 70% efficiency
150F for 60 min.
Boil: 60 minutes SG 1.056 6 gallons
8 oz. Molasses
Add at 10 min:
2 sticks cinnamon
.25 tsp clove
.5 tsp nutmeg
add to secondary:
1 vanilla bean
Hops: 1.2 oz. Kent Goldings (5% AA, 60 min.)
Yeast: Windsor yeast.
Log: 8 days at 72F primary, 8 days at 66F secondary
Carbonation: medium
Tasting: I like everything about this beer except the esters from the English style yeast. They just are too much and mask the spices - don't think a cooler primary temp would have mattered. Will go back to 1056 next time for a cleaner yeast profile and let the spices shine through. Still trying to get a bigger malt kick similar to Great Lakes - will have to up the melanoidan/aromatic some more as not there yet.
