"Sweet Amnesia" IPA

A crisp, clean, refreshingly hoppy West Coast India Pale Ale.

Type: Extract w/grain Size: 5.25 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 73 IBU
OG: 1.065 FG: 1.014
Alcohol: 6.5% v/v (5.1% w/w)
Water: Filtered using a Brita.
Grain: .25 lb. American Munich
.25 lb. American crystal 20L
Steep: Steep the grains at 155 degrees for 30 minutes. Do not squeeze the bag.
Boil: 60 minutes SG 1.136 2.5 gallons
7.0 lb. Light malt extract
2.0 lb. Wheat extract
Irish Moss added at 30 minutes left in the boil.
Hops: .5 oz. Columbus (15% AA, 60 min.)
2 oz. Horizon (13% AA, 60 min.)
.25 oz. Cascade (6% AA, 45 min.)
.25 oz. Centennial (10.5% AA, 45 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Centennial (10.5% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Centennial (10.5% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: WYeast California Lager Activator Pack. No starter necessary.
Log: Dry Hop with the following three days before bottling:

-1oz Cascade
-1oz Centennial
-1oz Columbus
Carbonation: Boil 3/4 cup of corn sugar for 10 minutes. Pour into the bottling fermenter and rack it prior to bottling.
